Deep fried vegan mac and cheese

I have a child with nightshade allergies and was thinking I could do this with sweet potatoes and leave out the pepper. Just wondering what issues I might run into.

Thanks for your thoughts. Hi Cassandra! Sweet potatoes have a very distinct flavor and the texture is not as starchy as a regular potato. I use potatoes in this sauce for the texture mainly but they also lend some creaminess, which sweet potatoes do not. That being said, you can definitely try it as long as you are aware that it would change the flavor and texture of the sauce. You can always play around with adding more cashews and adjusting the spices and seasonings to see what you can get!

The idea of baking them into balls would still work though! Let me know what you end up doing! I just recently became aware of your website and love that you cook with no or minimal oil and sugar.
